Nothing says "Welcome to Fall" like these candied sweet potatoes. You can easily enjoy these soft slices of sweet potatoes covered in a sweet brown sugar and cinnamon glaze.

Ingredients

  • 2 pounds sweet potatoes peeled and chopped into 1-inch cubes
  • ¼ cup unsalted butter
  • ¾ cup packed light brown sugar
  • ¼ cup granulated white sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt

Instructions

  • Add the sweet potatoes, unsalted butter, light brown sugar, white sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt to a medium-sized pot over medium heat.
  • Cover and cook, stirring occasionally, until the sweet potatoes are tender, about 35 minutes.
  • Remove the lid and cook for 5 minutes, or until the syrup has thickened and the sweet potatoes are caramelized.
  • Allow to cool for about 10 minutes, and then serve warm.

Notes

Make-Ahead Option: Prepare the candied sweet potatoes a day in advance and reheat them gently on the stovetop before serving.
Vary the Sweetness: If you prefer a less sweet dish, you can reduce the amount of sugar by ¼ cup in total. Alternatively, you can substitute some of the white sugar with a natural sweetener like maple syrup or honey for a slightly different flavor profile.
