Ingredients

  • 2 large russet potatoes cut into ¼-inch sticks
  • Hot tap water enough to fully cover potatoes for soaking
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water for the slurry
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  • Preheat the oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
  • Place the cut potato sticks in a large bowl and cover with hot water. Let them soak for 10 minutes, then drain and dry them thoroughly with a clean towel.
  • In a separate bowl, whisk together the cornstarch and water to make a slurry. Add the dried potato sticks to a large bowl and toss with cornstarch slurry to coat evenly.
  • Drizzle the vegetable oil over the potatoes and mix well.
  • Spread the fries in a single layer on the prepared baking sheet, not overlapping. Bake for 20 minutes, then remove and flip each fry.
  • Return to the oven and bake for an additional 15-20 minutes or until golden.
  • Sprinkle with salt or your favorite seasonings immediately after removing from the oven. Serve hot with your favorite dipping sauce.

Notes

Add your salt and seasonings immediately after removing the fries from the oven while they are still hot. This helps the seasonings stick better and distribute more evenly than if you wait until they've cooled.
