Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchement paper or a silicone baking mat.
Place butter and sugar in an electric mixer. Set the mixture on low speed and cream butter and sugar until thoroughly combined.
Add in the egg, vanilla extract, and molasses and mix well.
Add in the flour, salt, and oatmeal and mix until combined.
Use a teaspoon to drop the cookie dough onto the prepared baking sheet about 2 inches apart.
Place in preheated oven and bake for 5-7 minutes, until the cookies are lightly browned. Remove from oven and allow cookies to cool on sheet for a few minutes before removing from the sheet.
Notes
These cookies spread a lot. Make sure the cookie dough is not larger than a teaspoon when placing it on the cookie sheet. Set them 2 inches apart from each other so they don’t bake into each other. You can bake 2 sheets at a time. With one sheet, my cookies baked in 5 minutes. With two, it took about 7 minutes and some sheets needed to be pulled before the other. Watch these cookies closely, they bake fast and can burn easily if not watched. Store cookies in an airtight container for up to a week.
