Place the shrimp in a large bowl and sprinkle with Cajun or blackened seasoning. Toss to coat evenly. Set aside.
Heat the olive oil in a large skillet or cast-iron pan over medium-high heat. Add the seasoned shrimp in a single layer. Cook for 2 minutes on one side until the shrimp starts to turn opaque.
Flip the shrimp and cook for another 2-3 minutes on the other side.
