Sweet Potato Waffles

Mashed sweet potatoes are added to a basic waffle batter, then maple syrup is added for sweetness and some pumpkin pie spice for a touch of warming spice. Once cooked, finish off  the sweet potato waffles with butter and a drizzle of maple syrup.

Whisk the dry ingredients until well mixed. In a separate bowl, whisk together the eggs, milk, melted butter, and maple syrup until smooth.

Add the wet ingredients to the dry and whisk just until combined, then gently fold in the mashed sweet potato puree.

Pour the batter into a preheated waffle iron and cook until the waffles are golden brown.

Serve immediately with your choice of toppings, such as powdered sugar and additional maple syrup.
