Place the turkey wings in a roasting pan and drizzle with olive oil, then mix all the seasonings together and sprinkle over the wings.
Top the wings with sliced onions and bell peppers. Cover with foil and bake for 1 hour and 15 minutes.
Heat butter and cook onion and garlic until soft. Then stir in the sage, smoked paprika, and flour and cook for 1-2 minutes.
Add in the pan drippings, then slowly stir in the stock and simmer until it thickens a little.
Pour the gravy over the wings and bake uncovered for 35-40 minutes.
Serve with rice and enjoy!
