Pickled Watermelon Rind

Watermelon Rind | Water Salt | Sugar | Rice Vinegar Star Anise | Allspice Berries

Add watermelon rind, water, and salt to a large bowl and allow to sit for 8 hours.

Warm rice vinegar,  water, sugar, salt, star anise, and all-spice berries, then add the watermelon rinds.

Lower the heat to a simmer and cook until the rinds become slightly translucent and tender.

Carefully transfer the hot watermelon rinds into a clean, sterilized glass jar and fill with the brine.

Allow the pickles to cool to room temperature, then refrigerate for at least 24 hours.
