Prepare the saltfish by soaking it in water overnight. Next, drain it, then boil and drain again and finally break it into small pieces.
Heat oil and sauté onions, scallions, thyme, and scotch bonnet until the onions have softened. Then stir in the fish.
Add tomato and ackee and cook until heated through, then season with black pepper.
