Growing up in a Jamaican household has its perks. Every Saturday morning there was Beres Hammond or Bob Marley playing in the house as we cleaned and if we children were good, mom made us these delicious fritters.
Move over banana bread, you’ve got some competition. I’ve been told I have a pretty amazing banana bread recipe (took lots of trying out recipes to get that one perfect) but I can’t believe I haven’t written about these banana fritters before.
They were a huge yummy part of my childhood and I’m excited to share them with you today. They are the perfect way to use those ripe bananas before they go bad.
How to make Banana Fritters
First, grab three ripe bananas and smash them together with a fork until they are mashed and a little watery.
Then add your vanilla extract, cinnamon, nutmeg, brown sugar, and salt to bananas. Next, add your all purpose flour. I use a sifter to add my flour. If you don’t have one, no worries, you can still make the recipe. I just find the sifter allows my flour mixture to incorporate into my mashed bananas easier.
Stir with a spoon until your mixture is fully combined. Your batter should not be too thick or thin but should flow easily off a spoon.
Pour about ¼ cup oil in a 10 inch skillet and heat it over medium-high heat. Once your oil is hot, pour the fritters in pan by the spoonful.
Once bubbles appear in the top of the fritter and the bottom is golden brown, flip the fritters and cook until the other side is brown as well. Mine take about 2 minutes per side to brown.
Remove fritters from skillet and drain on paper towel. Ya mon 🙂

Notes
- The riper your bananas are, the sweeter your fritters will be. Modify sugar amount to your preference.
- The fritters are not meant to be fluffy like pancakes or bread. They are to be thinner and moist.
- If using a cast iron skillet, reduce heat to medium rather than medium high.

Love it. Fast easy delicious. It’s something you have on hand when your bananas are turning. I liked mine with a little sprinkle of powdered sugar. Reminds me of a potato pancake. Not quite sweet not quite savory
George says
What is use of 1 cup flour? We have lots of cups, all different capacities why not just simply write say 120 g flour
Tanya says
Hey George, I typically don't measure the flour with this recipe, honestly because my mother never did. However, for those that want to measure, a typical 1 cup of flour is 125 grams when I measure it.
Gail says
@George, one cup is 8 oz measurements for cooking r cups n teaspoons n table spoons all measurements for cooking
Gail says
@Tanya, there's 250 grams in a cup according to Google
Kayla says
@Gail, I think it depends on what type of flour you use, google probably just gave an average.

Reminds me of home... well done

I made these tonight but used self raising flour accidentally. They puffed up so I made a little hole in each one and filled them with squirty cream. You have to eat them as you fill them but they were like banana fritter profiteroles. Absolutely delicious. Thank you.

Peter says
Just made them, found the mixture way to thick so added about 2 tbs of lactose free milk, cooked up great

Lilith Rohn says
can you refrigerate unused batter?
Tanya says
Hi Lilith, I've never actually refrigerated it but it should work fine, similar to pancake batter.
Kay says
Tasty! But these are much chewier and doughier than I recall from my childhood days. Perhaps I will try baking powder next time as someone suggested.
Lulu says
Delicious. Grew up eating this my dad and my would make this for me. Now I can make it for myself.

RIDICULOUSLY delish and SUPER easy to make!!! I made curry chicken and rice & peas for the first time tonight, and we didn’t have any plantains, so I searched for a fried banana recipe to make up for that, but these exceeded my expectations and ruined my tastebuds for all other snacks! 😩😂😋 My husband and daughter weren’t home yet, so my son and I had to restrain ourselves from devouring all of them!
Kenneth Miller says

As a kid, these were a treat served at Christmas. My aunt always had them at a big holiday breakfast. They got included at the main holiday meal as well. I haven't thought about these for years, thank you!!!
Ed says
Never had banana fritters before, are they supposed to be dense/doughy? Still a good fast easy recipe. Love your airfryer recipes too !!!
Tanya says
Hi Ed, they won't be light and fluffy like other fritters. They shouldn't be dense but a little doughy is expected.
David says
@Ed,after fried and cooked the texture should almost identical to Shakey's Pizza Mojo Potatos but just a tad bit softer on the inside. The hardest part is getting the flour ratio down. Tip: cooks great with the "white pasty" looking Crisco Vegetable oil. sprinkle a pinch of surgar ontop after frying and super delicious.
David says
@Ed, i fogot to mention as others have stated an egg helps too.
