With summer here, zucchini is in abundance and I am thrilled. I love using zucchini in different recipes like this zucchini mushroom chicken. I’m also a huge fan of zucchini fritters which I used to make on the stove top. Now that I’m an air fryer addict, I make these fritters in the air fryer for easier clean up and a healthier option.
These fritters made in the Air fryer are crispy on the outside yet nice and soft on the inside. Thanks to the Air Fryer, there is no need for grease popping with this recipe.
How to make Air Fryer Zucchini Fritters
First, you’ll want to prepare your zucchini by cutting off the ends and by using the large scales of a box grater to grate the zucchini.
Place grated zucchini in a large bowl and add 1 tablespoon of kosher salt to the bowl and toss the zucchini. Let it sit for 10 minutes. This not only seasons the zucchini with salt, it also helps release the excess water.
After 10 minutes, use a good quality paper towel or clean dish towel and squeeze the excess water from the zucchini until the zucchini is dry. Place dried zucchini in a bowl.
Add egg, flour, garlic powder, onion powder, paprika, and black pepper to bowl and stir to combine.
Place a parchment liner in your Air Fryer basket and place the fritter mixture in the Air Fryer, making sure they don’t touch. Lightly spray the fritters with oil.
Close Air Fryer and cook on 360 degrees Fahrenheit for 12 minutes, flipping and then spraying fritters halfway.
While fritters are cooking, you can prepare the dipping sauce by combining greek yogurt, chopped herbs, lemon juice, and salt.
Once done, remove fritters from Air Fryer and serve with dip. Enjoy 🙂

Notes
- This recipe calls for 1 tablespoon of Kosher salt to add to the shredded zucchini so that the zucchini can release excess moisture and to season it. The excess water needs to be squeezed out. The zucchini must be properly drained to get the fritters crispy. If you find that is too much salt, simply rinse the salt off the zucchini before squeezing out the excess salt.
- Kosher salt has bigger crystals than table salt. If using table salt, you need to cut the salt content by half.

Thank you Deb 🙂
Diane Craig says
Are you going to publish a cookbook with all of these wonderful recipes?
Tanya says
Thanks Diane! Maybe one day when my youngest is a little older and I can find the time lol.
Lauraine says
This recipe has been sitting in my “Recipes to try” folder for the longest time, finally made today and I'm kicking myself for not making them sooner...lol. They were fantastic and easy to do. Your recipes are easy to follow but the videos are what I appreciate the most, it’s much easier visually seeing what you are doing as a posed to reading. I made no changes to your recipe except for using my favorite brand of ranch dressing as a dipping sauce. Next time I will flatten the fritters a little before cooking. I used my regular air fryer so I added 2 more minutes to the cook time. My favorite recipe of yours is the Pork Carnitas which is cooking in my Ninja Foodi right now. Thank you for all the great recipes and videos. 😀
Tanya says
Thanks so much Lauraine! That ranch dressing for dipping is pretty genius, going to give that a try next time.
Jale Breidenstein says
I’m getting ready to make these . I see some recipes with Parmesan cheese? Have you ever done or would that make more salty. If add, 1/4 cup?
Tanya says
Hi Jale, I haven't added parmesan but it would be a fine addition. Parmesan is salty so I suggest either rinsing the zucchini before adding the parm or cut the salt in 1/2.
Roger says
Has anyone ever used the nonstick Reynolds foil in the bottom of the air fryer? It does not have holes in it So I wonder if it would work OK.
A Mears says
@Roger, my air fryer instructions distinctly state that using tin foil in the unit will cause it to overheat and malfunction. I would check your user manual.
Janine says
@Roger, I use aluminum foil sheets in my air fryer all the time. I buy them at Sams club.
Jen Ross says
These were DELICIOUS!! Made them twice this weekend. They did stick to the air fryer, even after a good oiling, so I need to try the parchment paper. Flavors are spot on, and nice and crispy!!
Tanya says
Thank you Jen! So glad you liked the recipe 🙂
Saundra Carmical says
You should have a cook book, your photos are spot on and your
recipes are simply fabulous. I would buy it in a heart beat!!!
Tanya says
Thank you so much Saundra!! A cookbook has been on my mind lately, just need a few more hours in a day to get one done lol.
