These potato wedges aren’t your normal everyday potato wedges. They’re crispy, very well seasoned, and fluffy on the inside.
If you've been following my blog journey from week to week, you'll notice that I'm obsessed with my Air Fryer. I bought it when I was pregnant because I was craving french fries. My first air fryer recipe shared here was this Air Fryer General Tso Chicken Recipe.
These wedges take a little more effort than traditional potato wedges but it’s so worth it in the end! They are quick and easy to cook in the air fryer, and way less messy than traditional deep frying. They come out perfectly crispy and the seasoning is just too good!
Serve them up as an appetizer or side for one delicious bite. You’ll be so pleased you skipped KFC and made these at home instead!

How to make these Breaded Air Fryer Potato Wedges
First, grab two equally sized Russet potatoes. Then, you'll cut them into equal sized wedges. Here's a good graph on how to cut potato wedges. Make sure the wedges are of similar size so they cook evenly.
Then whisk your egg and milk in a medium sized bowl. Place your potato wedges in the bowl and coat them with the mixture. Set aside.
Next, in another medium bowl, combine your flour, seasoning salt, garlic powder, paprika, and black pepper in a bowl and stir until combined.
Next, take your potato wedges and coat them in the flour mixture, making sure all sides are covered. Shake off any excess flour.
Once your wedges are coated, it's time to place them in the Air Fryer basket. Spray the bottom of the Air Fryer basket with oil so your wedges won't stick. Then lay them in a single layer on the air fryer basket.
Then spray your air fryer wedges to cover any flour spots.
Close the air Fryer and set the temperature to 360 degrees Fahrenheit for 22 minutes. After 11 minutes, open your Air Fryer. If you see any spots of flour on these side of the wedges, spray them with oil. Then, flip your wedges and spray this side with oil. Close the air fryer and cook for the remaining 11 minutes.
And done 🙂 Once this batch of wedges is done, repeat until all your potato wedges are cooked.
What are the best potatoes to use?
To get the fluffiest and crispiest potato wedges, you will need to use a starchy potato. I love to use Russets and Yukon Gold will work well too. It’s best to avoid waxy potatoes like reds and fingerlings, they will still come out well, but they won’t have that soft fluffy middle.
There’s no need to pre-cook the potatoes, just wash and dry them before cutting them into wedges. I love that you don’t have to peel them!
Can you make these without oil?
It’s defiantly best to use some oil, it will help the wedges to cook more evenly and will help them to get crispy and brown. If you don’t spray them with oil, the flour coating can remain quite dry. You’ll need a lot less than traditional deep frying for sure though!
It’s best not to use an aerosol spray for the oil, like PAM, as this can damage the coating of the air fryer basket. Instead, use a pump spray bottle for a nice even coating. For best results, use a high heat neutral oil like canola, vegetable, peanut, or avocado.
Can you make them ahead and reheat them?
These seasoned potato wedges are great right out of the air fryer, but if you have leftovers don’t throw them out! One of the reasons I love the air fryer so much is because it reheats so well!
Cooked wedges can be stored in an airtight container in the fridge for up to 3 days. To reheat them, preheat the air fryer to 380F and cook them for 3 to 5 minutes, shaking halfway through. They’ll come out perfectly crispy and taste as they’ve just been cooked!
What do you serve them with?
These crispy air fryer wedges are great to serve as an appetizer with dips like ketchup or Vinegar BBQ Sauce, they are an excellent addition to game day! they are also great served as a side with a main, try them with some of these favorites:

Recipe Notes and Tips
- I recommend that you cook these wedges in batches. You can add all the wedges in at the same time but it would require you to turn the wedges in every five minutes or so with silicone tongs. For best results, laying the wedges in a single layer is suggested.
- It’s best not to cut the potatoes too far ahead of time as they can start to brown. If you’d like to prep them ahead, cut the wedges and keep them covered in a bowl of water till ready to cook.
- Grease your air fryer basket with a little oil before cooking, this will stop the wedges from sticking and will make them easier to flip.
- I LOVE this KFC copycat seasoning, but be sure to try your own seasoning mixes for other flavors!

KFC Copycat Potato Wedges (Air Fryer Method)
Ingredients
- 2 large Russet Potatoes
- 1 large egg
- 1 Tablespoon milk
- ½ cup flour
- 1 ½ Tablespoon Seasoned Salt
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon ground black pepper
- Oil for Spraying
Instructions
- Wash and dry Russet potatoes. Cut into wedges, set aside.
- Whisk egg and milk in a large bowl. Toss russet potatoes in egg mixture until potatoes are fully covered. Set aside.
- Combine flour, seasoned salt, paprika, garlic powder, and black pepper in a medium sized bowl.
- Take a russet potato wedge out of the egg mixture and place it in the flour mixture, coating all sides. Shake off any excess flour. Place wedge on the bottom of a greased Air Fryer basket.
- Repeat with the remaining wedges, making sure the wedges are in a single layer on the bottom of the basket.
- Spray the wedges with oil, covering any flour spots.
- Close the Air Fryer basket and cook the wedges on 360 degrees Fahrenheit for 11 minutes. Open basket, spray any flour spots that you see on the wedges, then flip the wedges. Spray this side of the wedges. Close the Air Fryer basket and cook for 11 more minutes.
- Serve wedges with ketchup and enjoy 🙂

Hi Jenny, you sure can. Just spray the basket and make sure to preheat to lessen the chances of sticking. The parchment paper just helps with the sticking, especially on wire grates.

I forgot to mention in my review (vegan review by taylor) I also cut up and soaked my potatoes overnight as well as added a fistful of corn chex that I had put in a baggy and crushed a little with a rolling pin and put this in my flour mixture just to add a layer of crispiness.

The last few times I've been to kfc they've told me they stopped serving wedges and I had a bunch of potatoes getting almost too old in my pantry. I found your recipe and got to work. I'm vegan so I switched out the egg with bob's red mill egg replacer and milk for cashew milk (with a tbs or so of apple cider vinegar because a lot of vegan recipes ask to do so to create a buttermilk). These wedges are extraordinarily delicious. I can't stop eating them. Thank you!!

Were they supposed to be really powdery? We followed instructions to a T, and seven cut down on seasoning a little, they ended up tasting very good, but very dry and powdery, maybe I need to give it another shot, I don't know, but for now, it didn't work out. ?

No, they shouldn't be powdery. They'll need to be sprayed really well to avoid being powdery. That's my guess as to why they didn't work out for you.

@Tanya, Mine turned out awful and powdery too. I most likely did not douse them with enough oil as suggested, but if you have to do that then what's the point of using an air fryer?

Hi Lisa, yep, sounds like you need to spray a bit more oil. The kind of spray bottle matters too. An oil mister that can spray an even mist over the wedges is better than one that streams it.

I just got an air fryer and wanted to try these out. It wasn't that great imo and nothing like KFC. The taste was lacking and it wasn't super crispy. I ended up having to tweak it with a recipe I tried in the past( that was deep fried but I did it in the air fryer this time) and it turned out much better. I hate leaving bad reviews and rarely do but I also appreciate the lower reviews when I'm looking at recipes. 🙂 I'm sure others may like it but my family and I didn't.

I made these tonight and the family loved them. Since my wife is Vegan, I did not use the milk and egg however, I coated the wedges in the flour while they were still wet and let them sit for about 10 minutes, then followed the rest of your instructions. Mine were crispy with no flour taste at all. A new staple item in my cooking plans. Thank you very much for posting.
