These potato wedges aren’t your normal everyday potato wedges. They’re crispy, very well seasoned, and fluffy on the inside.
If you've been following my blog journey from week to week, you'll notice that I'm obsessed with my Air Fryer. I bought it when I was pregnant because I was craving french fries. My first air fryer recipe shared here was this Air Fryer General Tso Chicken Recipe.
These wedges take a little more effort than traditional potato wedges but it’s so worth it in the end! They are quick and easy to cook in the air fryer, and way less messy than traditional deep frying. They come out perfectly crispy and the seasoning is just too good!
Serve them up as an appetizer or side for one delicious bite. You’ll be so pleased you skipped KFC and made these at home instead!

How to make these Breaded Air Fryer Potato Wedges
First, grab two equally sized Russet potatoes. Then, you'll cut them into equal sized wedges. Here's a good graph on how to cut potato wedges. Make sure the wedges are of similar size so they cook evenly.
Then whisk your egg and milk in a medium sized bowl. Place your potato wedges in the bowl and coat them with the mixture. Set aside.
Next, in another medium bowl, combine your flour, seasoning salt, garlic powder, paprika, and black pepper in a bowl and stir until combined.
Next, take your potato wedges and coat them in the flour mixture, making sure all sides are covered. Shake off any excess flour.
Once your wedges are coated, it's time to place them in the Air Fryer basket. Spray the bottom of the Air Fryer basket with oil so your wedges won't stick. Then lay them in a single layer on the air fryer basket.
Then spray your air fryer wedges to cover any flour spots.
Close the air Fryer and set the temperature to 360 degrees Fahrenheit for 22 minutes. After 11 minutes, open your Air Fryer. If you see any spots of flour on these side of the wedges, spray them with oil. Then, flip your wedges and spray this side with oil. Close the air fryer and cook for the remaining 11 minutes.
And done 🙂 Once this batch of wedges is done, repeat until all your potato wedges are cooked.
What are the best potatoes to use?
To get the fluffiest and crispiest potato wedges, you will need to use a starchy potato. I love to use Russets and Yukon Gold will work well too. It’s best to avoid waxy potatoes like reds and fingerlings, they will still come out well, but they won’t have that soft fluffy middle.
There’s no need to pre-cook the potatoes, just wash and dry them before cutting them into wedges. I love that you don’t have to peel them!
Can you make these without oil?
It’s defiantly best to use some oil, it will help the wedges to cook more evenly and will help them to get crispy and brown. If you don’t spray them with oil, the flour coating can remain quite dry. You’ll need a lot less than traditional deep frying for sure though!
It’s best not to use an aerosol spray for the oil, like PAM, as this can damage the coating of the air fryer basket. Instead, use a pump spray bottle for a nice even coating. For best results, use a high heat neutral oil like canola, vegetable, peanut, or avocado.
Can you make them ahead and reheat them?
These seasoned potato wedges are great right out of the air fryer, but if you have leftovers don’t throw them out! One of the reasons I love the air fryer so much is because it reheats so well!
Cooked wedges can be stored in an airtight container in the fridge for up to 3 days. To reheat them, preheat the air fryer to 380F and cook them for 3 to 5 minutes, shaking halfway through. They’ll come out perfectly crispy and taste as they’ve just been cooked!
What do you serve them with?
These crispy air fryer wedges are great to serve as an appetizer with dips like ketchup or Vinegar BBQ Sauce, they are an excellent addition to game day! they are also great served as a side with a main, try them with some of these favorites:

Recipe Notes and Tips
- I recommend that you cook these wedges in batches. You can add all the wedges in at the same time but it would require you to turn the wedges in every five minutes or so with silicone tongs. For best results, laying the wedges in a single layer is suggested.
- It’s best not to cut the potatoes too far ahead of time as they can start to brown. If you’d like to prep them ahead, cut the wedges and keep them covered in a bowl of water till ready to cook.
- Grease your air fryer basket with a little oil before cooking, this will stop the wedges from sticking and will make them easier to flip.
- I LOVE this KFC copycat seasoning, but be sure to try your own seasoning mixes for other flavors!

KFC Copycat Potato Wedges (Air Fryer Method)
Ingredients
- 2 large Russet Potatoes
- 1 large egg
- 1 Tablespoon milk
- ½ cup flour
- 1 ½ Tablespoon Seasoned Salt
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon ground black pepper
- Oil for Spraying
Instructions
- Wash and dry Russet potatoes. Cut into wedges, set aside.
- Whisk egg and milk in a large bowl. Toss russet potatoes in egg mixture until potatoes are fully covered. Set aside.
- Combine flour, seasoned salt, paprika, garlic powder, and black pepper in a medium sized bowl.
- Take a russet potato wedge out of the egg mixture and place it in the flour mixture, coating all sides. Shake off any excess flour. Place wedge on the bottom of a greased Air Fryer basket.
- Repeat with the remaining wedges, making sure the wedges are in a single layer on the bottom of the basket.
- Spray the wedges with oil, covering any flour spots.
- Close the Air Fryer basket and cook the wedges on 360 degrees Fahrenheit for 11 minutes. Open basket, spray any flour spots that you see on the wedges, then flip the wedges. Spray this side of the wedges. Close the Air Fryer basket and cook for 11 more minutes.
- Serve wedges with ketchup and enjoy 🙂

Made these tonight for the first time. Super easy to make and cooked perfect but were bland tasting. Just need to add some salt and extra seasoning to the flour mixture next time. Will make them again.

I've prepared the recipe as directed, but can advise that this recipe does not work very well in the Instant Vortex's rotisserie/air fryer basket. The basket knocked off all of the seasoning and left it in a crumby mess in the bottom of the fryer.
Do you happen to have any tips or tricks that could help me remedy this problem?

Hi Lancie, are you referring to a rotating basket? If so, I don't like putting breaded items in those. I would lay the wedges on the air fryer trays instead, rotating and turning halfway through cooking. That would fix the issue you are having.

Thank you for responding! Yes, the Instant Vortex has a rotating basket. I may have also had the wedges too thick, since they also did not cook all the way through - and that's even after increasing the cooking time to 15 minutes from the beginning. :/
I'll give it another shot on the wedges, but for now, I think I'll try air frying a bag of seasoned potatoes in the basket.

Hi Gloria, not sure what went wrong then. I've made and tested these fries multiple times. I only found that they had a floury taste if they were cooked for too short a period of time or if the basket was over crowded.

Hi Mary, that's beacause of the seasoning salt. That can be adjusted with either getting rid of the seasoning salt and using regular salt or finding a low sodium seasoning salt to use.

Has anyone experimented with air frying batches of them and freezing them for later! I would love to make some ahead and take them to my daughter, who is a college senior. she lives on an apartment on campus, & while they would love to have an air fryer, they dont have space for one. Wondering if I could fry them, freeze them, and she could bake them in her oven? Does anyone know if that works?

Hi Angela, You can use these recipes in your oven on the Air Fryer function. The only change may be time as different air fryers have different wattage. Some cook faster or slower than others.

TIP: If you cook these fries in your confection oven, place them on a wire rack w/space between them and the tray. This allows the air to flow all over the fries so they won't be soggy underneath.
