I love to make a big breakfast for my little family on Saturday mornings. This breakfast can range from biscuits and gravy (yum) to pancakes (double yum).
However, no weekend morning breakfast wouldn't be complete without some good old fashioned breakfast potatoes as a side. These potatoes are great for breakfast but work well as a side for lunch or dinner. Their versatility makes them a great option for any menu. They are easy to prepare, so you can enjoy them any day.
The air fryer method ensures they're cooked to crispy perfection without excessive oil. It's been one of my go to side dish for years.

Ingredients Needed
Ingredient amounts and full recipe instructions are on the printable recipe card at the bottom of the post.
- Russet Potatoes - you can also use Yukon gold, red potatoes, or even sweet potatoes for a slightly sweeter twist.
- Salt
- Olive oil - or any high-heat cooking oil like avocado oil, canola oil, or grapeseed oil
- Garlic powder
- Parsley
How to Make Air Fryer Roasted Potatoes
Clean and scrub potatoes under running water. Dice potatoes into ½-inch cubes. Place potatoes in a bowl and cover with ice-cold water. Allow to soak for 45 minutes.
Remove the potatoes from the water and dry them with paper towels. Add potatoes to a dry bowl and add olive oil, salt, and garlic powder. Stir potatoes ensuring that all pieces are coated in all the ingredients.
Place in air fryer basket. Cook at 400 degrees Fahrenheit for 20-23 minutes, shaking the basket halfway through. Potatoes are done when they are golden brown on the outside and soft on the inside.
Once the potatoes are golden and cooked through, top with parsley if desired.
Expert Tips
- Soaking potatoes in cold water removes the extra starch that potatoes have and results in a potato that is perfectly crisp on the outside and tender on the inside. It's a method used by many chefs when it comes to frying a potato in hot oil. It makes sense that the same process would apply to the air fryer. If you don't have time to soak the potatoes, rinse them well and then dry them before proceeding with the recipe.
- Take time to properly season the potatoes, ensuring that they are covered in both the oil and the seasonings. This will improve the flavor of the finished potatoes.
- Leftover potatoes make a great addition to salads or as an ingredient in a fritatta.
Flavor variations
The flavors in this recipe are easily adapted, so feel free to have fun with these breakfast potatoes. I like to keep my potatoes super simple and use dry seasonings.
- Add dried herbs to flavor the potatoes: oregano; rosemary; and thyme would work a treat.
- Spice things up with a pinch of ground spices like cayenne pepper, cumin or smoked paprika.
- Red pepper flakes add a great burst of chili heat.
- You can add onions and peppers along with the potatoes if you like.
- Adjust the seasonings for taste preference.
How to store
To refrigerate: Store leftover potatoes in an airtight container, in the fridge, for up to 3 days. You can reheat it in a small bowl in the microwave in 30-second increments until they have warmed all the way through.
Make ahead: I recommend preparing the potatoes earlier and soaking them in ice-cold water for at least 45 minutes before you cook them. However, you could always prepare the potatoes the night before, then store them in the refrigerator, ready to cook the following morning.
FAQs
I've used russet potatoes in this recipe, but Yukon Gold or red potatoes would be great alternatives.
Soaking the potatoes before you fry them, whether in an air fryer, or a regular fryer. Soaking removes the starch from the potato. This helps the potatoes become lovely and crispy on the outside, and soft in the middle once fried.
If you don't remove the excess starch from the potatoes, you risk them sticking together in the air fryer and they won't crisp up the same.

Hi Tanya,
I have some giant Yukon golds, will this recipe work those or does it need to be a russet?
Thank you for all your fantastic recipes!
Noreen
Tanya says
Hey Noreen, Yukon's would work just fine. Just make sure to cut them just like you would the Russets.
Noreen says
@Tanya,
Thank You!
Earlene says
Can I cut up the potatoes and then put in water and refrigerate before going to bed, and then continue in the next morning? Or will that be too long of a soak?
Tanya says
Hi Earlene, that should be fine, especially if you are making them in the morning.

My husband loves breakfast potatoes with onion. My air fryer is new so any idea when to add onions to potatoes?

Hi Pat, I've done this a few times, i just add it all at the same time. The onions are prefectly roasted and tender.

My husband loves breakfast potatoes and following your recipe I used my IP air fryer and they were a hit. I have a question about soaking the potatoes. Can they be put in cold water and left in the refrigerator overnight?
Tanya says
Hi Sarah. So glad you liked the recipe. And yes, soaking overnight in the fridge works fine.

Nadine says
Hi Tanya. I was wondering about the airfried potatoes. I scrub and dry my potatoes, give then a good deep scratch all over with a fork, and microwave 3 minutes for every potato. When cool enough to handle, I cut then into cubes, wedges or whatever I feel like. Into a bowl with a bit of oil, salt, pepper and paprika. A good shake and then airfried on 200°c (we work in Celsius here in South Africa) 12 minutes or so. Shake to turn after about 7 minutes. Please try.
Tanya says
Thanks Nadine. I'll give your method a try.
Deborah says
These were amazing and so easy! I don’t cook and even I could make them!
PegP says
Tried this for breakfast tacos. Added cilantro & onion powder (wasn't sure if chopped onions would have worked, so didn't experiment...maybe next time!) to the ingredients. Cooked for less than 20 mins because I was only cooking one potato. It was done in about 10 minutes.
The potatoes came out crispy and cooked. Absolutely perfect for the eggs & potato tacos. Thanks. This recipe's definitely a keeper!
John Miles says
Outstanding! They came out Great! Will try it with french fries and Hash browns.. (shredded)
Tanya says
Awesome! So glad you like it. Air fryer potatoes are the best!
Dawn says
Can the potatoes be prepped the night before and allowed to soak overnight in the fridge to shorten the time needed to make this dish in the morning?
Laura says
I have the same question
Tanya says
Hi Dawn and Laura, I've never soaked overnight but it should work, as I've read elsewhere that some people soak overnight. If you are going to soak overnight, I'd make sure they are in the fridge so the water is cold.
Richa Gupta says
Wow this is my kind of side dish, looks yum!
