Boneless Skinless Chicken Thighs Curry Powder | Onion | Garlic All-Purpose Seasoning | Thyme Green Onions | Green Pepper Scotch Bonnet Pepper | Olive Oil Russet Potato | Salt | Pepper
Combine chicken, seasoning, curry, onions, peppers, garlic, and thyme. Then refrigerate for at least an hour.
Once marinated, remove onions, peppers, and garlic cloves from the chicken and set aside.
Heat olive oil and stir in curry powder, then add in the onions, peppers, garlic and thyme and cook until the onions have softened.
Next, add the chicken and water and cook, stirring occasionally, for 30-35 minutes.
When there is about 15 minutes remaining, stir in potato and continue to cook covered until the potatoes are softened.
