A fresh and flaky fish without the fishy flavor. Mahi Mahi is tender and toothsome and lends itself to being blackened very nicely. The crunchy crust a cast iron pan brings to the table is perfect.

Ingredients Needed
- Mahi Mahi filets – I usually find these frozen in my local freezer section.
- Unsalted butter – I choose to use unsalted butter to control the salt content.
- Blackened seasoning – I use a homemade blend, but storebought will work as well.
- Olive oil – for searing and cooking the fish on the stovetop.
- lemon juice – Adds an extra pop of flavor to the fish.
Tools Needed:
- Cast iron pan
- Meat thermometer
- Fish spatula
How To Make Blackened Seasoning
I love to use my Homemade Blackened Seasoning, which I’ve used in this recipe. Blackened seasoning is a tasty combination of the following spices:
Smoked paprika, cayenne pepper, onion powder, ground black pepper, kosher salt, dried oregano, dried thyme, and garlic powder. Some recipes include a little bit of brown sugar. My homemade version does not.
How To Make Blackened Mahi Mahi
Dip the Mahi Mahi filets in melted butter, covering both sides of each filet.
Then season both sides of the Mahi Mahi filets with blackened seasoning.
Place a large skillet pan over medium-high heat and add the olive oil once the pan is hot. Add the fish to the skillet and cook for about 2-3 minutes per side. Remove Mahi Mahi from the skillet.
Squeeze lemon juice over the Mahi Mahi filets before serving.
Storing Leftover Mahi Mahi
Store any leftover Mahi Mahi in an airtight container in the refrigerator for up to 2 days.
Freeze your fish in a tightly sealed freezer-safe bag in the freezer for up to 2 months. Thaw by running water over the bag.
What Makes A Fish Blackened?
Making a fish blackened is simply the process we follow here. Coating your fish in butter, then generously covering the whole fish in our blackened seasoning.
Cooking on a hot cast iron pan gets that delicious blackened crust we love. If you don’t have one, I highly recommend investing in one.
What To Serve With Blackened Mahi Mahi
Serve a creamy mashed potato in the Instant Pot or Slow Cooker alongside this light and flakey fish.
Utilize your air fryer to whip up some equally delicious veggies: my favorite Air Fryer Carrots (Sweet or Savory) or Air Fryer Green Beans.
Notes
- The length of time for cooking the Mahi Mahi will depend on the thickness of the fish.
- Mahi Mahi filets are cooked when the fish has reached an internal temperature of 145 degrees Fahrenheit.
- If you prefer to bake fish in the oven, brush the filets in melted butter, sprinkle with the seasoning, and bake at 375 degrees Fahrenheit for about 15-20 minutes.

- 2 1/2 tablespoons Blackened seasoning
- 2 tablspoons Olive oil
- Juice from 1 lemon
