Ingredients and Tools Needed for cabbage steaks
- Small head of green cabbage - I prefer to use green cabbage for this recipe, but any cabbage will do.
- Olive oil - This will help give your cabbage the nice roasted color.
- Seasoning - Garlic powder, smoked paprika, kosher salt, and black pepper. You can also use your own favorite seasoning blend.

How to make roasted cabbage steaks
Preheat the oven to 400 degrees Fahrenheit.
Slice cabbage into 1-inch thick pieces and place on a sheet pan. I used a cast iron sheet pan, which I find gives the best caramelization. If you don't have a cast iron, a dark sheet pan will do.
Rub the cabbage slices with olive oil. Sprinkle sides with garlic powder, smoked paprika, kosher salt, and black pepper.
Roast for 30 minutes. After 30 minutes, flip the cabbage steaks carefully. Continue roasting the steaks for an additional 10-15 minutes, until tender. Remove from the oven, serve, and enjoy.
How to cut cabbage for cabbage steaks
Firstly, a sharp and sturdy chef's knife is ideal when slicing through cabbages. They're very hard and depending on if you've washed them, slippery too.
Use a cutting board that does not slip around on your countertop. If yours does not have an anti-slip bottom, you can lay a kitchen towel down underneath to help prevent slipping. Still, be aware that it can still move.

How to store leftover baked cabbage steaks
Store completely cooled cabbage steaks in an airtight container in the refrigerator for up to 3 days.
I don't recommend that you freeze cabbage steaks. The process of freezing ruins the texture of the cabbage.
Re-heating cabbage steaks: Place cabbage steaks on a baking sheet and bake at 350 degrees Fahrenheit for as long as it takes for them to come up to the desired temperature. Alternatively, you can microwave them for a minute or two depending on your microwave.
Preventing your cabbage steaks from falling apart
Before taking the knife to your cabbages, peel away any loose leaves or leaves that are falling apart until you're left with a really tight cabbage head.
While you can get more cabbage steaks by cutting them into thinner pieces, the chances your cabbage steaks are going to fall apart are higher.
The ideal width is 1-inch thick slices, though the cooking time will be a bit longer, you'll end up with a sturdy but tender cabbage steak in the end. Check out this handy guide on How to Cut Cabbage.

Hi Dorothy, I haven't tried it that way but id you do, I recommend cooking it over low heat. The longer cooking time in the oven allows the cabbage slices to become tender.

This looks and sounds delicious but I was a bit shocked that it takes 40-45 mins to cook veg in the air fryer. Not quite as economical as doing it in the frying pan on the job. Tho perhaps this will taste and look better. I’ll def try it out tho. Thx for sharing.

Hi Alice, this recipe is roasted in the oven rather than the air fryer. I did test it in the air fryer, but wasn't thrilled with the results. I love how these come out in the oven.
