This Fruity Chicken Salad Recipe will have your family begging for seconds. Great for bag lunches. Great way to sneak some fruits and veggies in your picky eater’s diet.

I am the worst at packing my lunch. There, I said it. I have admit that most days I head over to a local restaurant with coworkers when I should be saving my coins and packing a lunch. Days that I do pack my lunch, it’s usually leftovers and although I will tear a leftover up, we don’t always have leftovers in our house. Well leftovers or not, I have vowed to become better at packing my lunch for work.

In order to do well at packing lunch, one thing is to have recipes that you can pack and actually enjoy for lunch. The typical peanut butter and jelly can get kind of boring after eating it for a few days straight. It’s necessary to have variety. This fruity chicken salad provides all the variety you need.

 The cool thing about chicken salad is that it can me made a few days ahead. Typically, when I make it, I buy a rotisserie chicken from the grocery store on Sunday, make the chicken salad the same day, and eat it for lunch on Monday and Tuesday. It yields enough to feed my family of 3 for both days.

I also love the fact that this fruity chicken salad is filled with fruit! Hooray for eating healthy! I actually love any recipe where I can get a little bit of fruit and veggies mixed with my meal. It’s also a great way to sneak fruit in your picky eater’s diet.

I recall the first time I made this chicken salad for my daughter. I packed it in her lunch bag and sent her on her way. When I picked her up from school, she was telling me how much she loved it. *tear* if you know my daughter, you would know that this is rare because the only things she appears to love are saltine crackers and spaghetti.

Add this chicken salad to your favorite bread, cracker, or even tortilla chip. See picture below on a day I made this and ate at my desk. We had no bread at the house that day and these tortilla chips were the bomb.com with this fruity chicken salad.

Fruity Chicken Salad

Ingredients

  • 2 cups shredded chicken from a rotisserie chicken
  • 1 apple chopped
  • 1 stalk celery chopped
  • 1/2 cup pecans chopped
  • 1/2 cup grapes cut in half
  • 1 8 oz tin of crushed pineapple drained
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • Salt & pepper to taste

Instructions

  • Grab a huge bowl and add all the above ingredients. Stir to combine. Cover and refrigerate for about 4 hours to allow all the flavors to merge. Enjoy on your favorite bread, cracker, or tortilla chip.
